Potato Soup- La Madeline CopyCat





I went to a lunch at a friends house recently and she served this delicious Country Potato Soup! Her name is Sara and she also has twins, but they are 8weeks old and SHE had several women over for lunch.. including all of their kids... and her own... talk about crazy super woman! Anywho, she told me the recipe for this soup and I found it online and made it tonight, it was very good! Enjoy!

This recipe is from Executive Chef Remy Schaal of la Madeleine French Bakery & Cafe. Founded in Dallas in 1983, la Madeleine has many neighborhood cafes and bakeries in five states and Washington, D.C. Excellent potato soup!

SERVES 8 (change servings and units)

Ingredients

Directions

  1. In a large saucepan, add butter, leeks and onions, and cook.
  2. (Do not brown vegetables.) Add chicken stock, potatoes, salt and fresh thyme.
  3. Cook for 40 minutes over medium heat, stirring frequently to avoid scorching.
  4. Add cream, bring to a boil and serve hot.
  5. Garnish with Cheddar cheese and diced bacon.

Pizza Pockets-Kid friendly

mmm, the kids loved this!
use garlic crescent rolls, top with sauce, pepperoni and mozzarella cheese
use two triangles that make a rectangle to cover
seal together sides
Bake at 375 for 13 minutes.


Pizza Rolls
2 packages of Garlic flavored Crescent rolls
1 can of pizza sauce
1 package of pepperoni
10 slices of mozzarella cheese, or shredded cheese

or
Any toppings you like

lay crescents in a rectangle as shown in picture, spread sauce, pepperoni, then cheese, top with crescent top and seal edges. Bake at 375 for 13 minutes. Cut up and enjoy!

Reese's Chewy Chocolate Cookies





Reese's Chewy Chocolate Cookies

2 c flour
3/4 c cocoa
1 tsp baking soda
1/2 tsp salt
1 1/4 c butter, softened
2 c sugar
2 eggs
2 tsp vanilla extract
1 1/2 c (10oz bag) Reese's peanut butter chips

Preheat oven to 350 degrees. Stir together flour, cocoa, baking soda, and salt; set aside. Cream sugar and butter until light and fluffy. Add eggs and vanilla; beat well. Gradually add flour mixture, beating well. Stir in peanut butter chips. (Don't cheat with generic PB chips - it's not the same at all!) Drop by rounded tablespoons on ungreased cookie sheets. Bake 8 to 9 minutes. (Cookies will puff up during baking and flatten while cooling; DO NOT overbake!!) Cool slightly and remove to wire rack.
**add a few extra Tbs flour to make them less flat.


Mine didn't turn out as chewy as I would've liked, so make sure you get to the oven fast... so they aren't in there longer than 8 minutes

Crock Pot: Italian Chicken-potatoes and carrots

Chicken, potatoes and carrots... oh my!

Crock Pot: Italian Chicken
4 chicken breasts
1 package of Italian Dressing seasoning
1 onion chopped
2 garlic cloves
20 baby carrots
10 red skin potatoes


Place chicken breasts in crock pot, place italian seasonings on top, chop onions and throw onions and garlic on top of chicken. Add in carrots and potatoes. Cook on low for 7 hours. Check to make sure chicken isn't drying out, add water if needed.

Cheddar Cheesy Mashed Red Potatoes


Cheddar Cheesy Mashed Red Potatoes

6-7 medium sized Red Potatoes
2 cups shredded cheddar cheese
small pint of sour cream
1 tbsp of butter (I used a spoonful of I Can't Believe It's Not Butter)
salt and pepper to taste
1 few drops of milk

Boil potatoes until they are soft, use masher not electric mixer to mash the potatoes, add in cheese, butter sour cream and milk, finally add in salt and pepper to taste.

Crock Pot Week: Crock Pot BBQ Ribs

My friend Leslie gave me this recipes and seriously, I've never had anything better! It was super easy and the ribs were falling off their bone! Leslie adapted this recipe to make it her own, so if you like it, it is because of her!
Served with steamed asparagus


Crock Pot BBQ Ribs
2 lbs rack of ribs
1 8oz can of beef broth
1/2 cup of water
1 bottle of BBQ sauce
1 chopped Onion
2 chopped garlic cloves
2 tbsp maple syrup
2 tbsp honey
3 tbsp soy sauce
1/2 tsp dry mustard (I used 1 tbsp dijon mustard because I didn't have dry mustard)

Cook in crock pot for 6-7 hours

Nutella Hot Fresh Croissants

Because I am in love with Nutella, I made these and they were so very good! My girls had them for breakfast and then for a snack they had them cold (straight from the fridge) and loved them both ways.
Roll out crescent dough triangles and put melted butter on them, 1 teaspoon of nutella and get ready to roll up.

put them on parchment paper lined pan and top with beaten egg mixture
bake till golden brown- about 13 minutes, dust with powdered sugar.

Homemade Nutella Croissants

Open a store-bought tube of crescent dough. Separate each of the triangles and lay them flat. Brush one side with melted butter. Place approximately 1 teaspoon of Nutella near the bottom (wide side) of the triangle. Roll the croissants from the wide side up to the tip of the triangle and bend to form a crescent shape. Using a clean pastry brush, brush lightly with a beaten egg mixture.

Place the croissants approximately 1" apart on a parchment lined baking sheet. Bake in a preheated 375 degree oven for 15 minutes or until the croissants are golden brown. Remove from the oven, transfer to serving platter and dust with confectioner's sugar. These are best served warm.

So... I'm obsessed with Nutella


So lately I've been looking for recipes and found out that there is an entire Day devoted to NUTELLA! National Nutella Day- it was Feb. 5th, 2010, I missed it, but found a bunch of recipes... therefore, I will be having a NUTELLA baking recipe week coming up! making lots of stuff... so get ready you little Nutella lovers and if you are not a Nutella lover or never had it... trust me, you'll be discovering the sweet... sweet.. awesomeness of this little treat!

Salsa Cheeseburger Sliders

Daniels little sliders, they were fun and little!


Salsa Cheeseburger Sliders

1 package of Hawaiian rolls
2 lbs ground meat
5 slices your choice cheese
1/4 cup salsa (I used hot)
Condiments you like
Chips and pickle if you want!
Salt and Pepper and I used Meat tenderizer and Hamburger Spice from McCormick

Mix raw meat with salt, pepper, meat tenderizer, hamburger spice and 1/4 cup salsa, put on grill, if burger is falling apart, put bread crumbs in to hold. We put foil down on top of grill to grill them.

Fun little burgers, can be used at appetizers if you'd like!

Fruit Pizza

TA-DA! It was Sooooo good, my family and I ate it in one night! You could choose more fruit or different kinds, I just choose the kinds I liked.


Recipe: FRUIT PIZZA

1 roll of sugar cookie dough
1 8oz of cream cheese
1 c. powdered sugar
juice from one can of pinneapple
sliced fresh fruit: kiwi, blueberries, strawberries, banana, pinneapple
half a box of strawberry jello
1 tbsp corn starch

1. roll sugar cookie dough out on greased pan or jelly roll pan, bake according to directions and let completely cool

2.Mix cream cheese and powdered sugar and slowly add pinneapple juice, spread over cookie

3. arrange fruit on top of pizza

4. combine jello, corn starch and 1 c. water in sauce pan. Bring to boil, then simmer till lightly thickens. About 10 mins. Drizzle over pizza.

5. chill

Crock Pot: Chicken Parmesan

This Chicken Parmesan was suggested to me from my Friend Amy and I am so excited to have a recipe suggested that I made it and was SOO glad, it was super easy and tasted great, the chicken was juciy.
Dipped in eggs and salt pepper mix, then bread crumbs, now searing them in the pan
put into crockpot, pour over the sauce!

Serve on Spaghetti, TA-DA!

INGREDIENTS
3 Chicken breasts (I used 6)
1 Egg (2 eggs)
1 t Salt
1/4 ts Pepper
1 c Dry bread crumbs (I used Planko crumbs)
1 1/4 c Butter (I used way less)
1 can Pizza sauce -- 10 1/2 oz (Use prego, or some sauce you like, 2 jars)
6 slices Mozzarella cheese
Parmesan cheese

DIRECTIONS
If using whole chicken breasts, cut in to halves. In bowl beat egg salt and pepper dip chicken into egg. Then coat with crumbs. In large skillet saute chicken in butter. Arrange chicken in pot. Pour pizza sauce over chicken. Cover and cook on low 6 to 8 hours. Add mozzarella cheese, sprinkle Parmesan cheese on top. Cover and cook 15 minutes. Makes 6 servings.

Turkey Tomato Grill Cheese


Spray bread with spray butter, or real butter, whatever you choose, put dijon mustard, then provolone cheese, then tomatoes on top.
Add the turkey
top with bread of your choice (I used "diet" bread as Daniel calls it)
Cut open for the yum
