Sweet Potatoes and Honey Mustard Panko Chicken



Honey Mustard Chicken

5 chicken tenders
1/2 cup of honey mustard dressing
1/2 cup panko bread crumbs

Marinate Chicken in Honey Mustard, roll in bread crumbs, 1 tbsp olive oil on bottom of a pan, bake in oven 25 minutes on 375.

Before they were baked....
They turned out yummy


 Slice sweet potatoes, I only used 2, sprinkle brown sugar on top, put pads of butter on top of that and add marshmallows the last 5 minutes of baking...




Baked Sweet Potatoes

2 sweet potatoes
1/4 cup brown sugar
1/3 stick of butter
Marshmallows (however many you desire)

Slice sweet potatoes, spread them in baking dish, sprinkle brown sugar over them, lay pads of butter on top, bake for 25 minutes in 375 degree oven... last 5 minutes put marshmallows in!

Chicken Spaghetti: A Southern Classic

A Southern Classic.. yum!


 Boil Chicken, set aside and drain...

 While the noodles are boiling, here are the main ingredients... 2 cans cream of Mushroom soup, Velveeta Cheese 1/2 lb.
Mix together and serve!


Chicken Spaghetti

1/2 lb chicken tenders (boiled and shredded)
1/2 lb of Velveeta Cheese
2 cans of Cream of Mushroom soup
Milk to thin (optional)
1 package of Spaghetti noodles (Boiled and drained)
Salt and Pepper to Taste

Boil chicken, shred and set aside.  Boil noodles, drain and add back to the pot.  Add chicken to spaghetti and then add in 2 cans of soup, and cheese over low heat, stir until cheese is melted.  Add milk to thin if it's too thick.  Add salt and pepper to taste.  You can add Parmesan cheese to the top before you eat, I don't do this but my husband does.  Some people like to add rotel tomatoes also, which would be nice.

Coconut Shrimp





Well these shrimp were really a test batch... I fried some and I baked some.  I think the baked shrimp tasted great, the shrimp part actually tasted the best, but the fried shrimp the fried part tasted really good.  I will give instructions for both.




Coconut Shrimp

1 lb of Peeled deveined shrimp
1/2 cup flour
salt
pepper
2 eggs
1 tbsp honey
1 cup Panko Bread Crumbs
1/2 cup shredded coconut

1/2 cup of Canola Oil (If you plan to fry)
3 tbsp of Olive Oil ( if you bake)

Mix bread crumbs and coconut together in one bowl, in separate bowl mix eggs and honey together, in another bowl mix flour, salt and pepper together.  Dredge shrimp in flour, then in egg mixture, then in bread crumbs.

If you fry: get oil hot but not too hot, I'd say on medium heat, drop shrimp in and get them light brown on each side.

If you bake: Put oil in pan, heat oven to 350 and bake for 15 minutes on one side and flip them, then bake for 15 minutes on other side.

Serve with: Ketchup, Honey Mustard or whatever you like!  I did Honey mustard and it was great!

Cheesy Squash Casserole

 Mix all ingredients but the panko and butter...

 Bake for 45 minutes and then top with panko and butter and put in for 30 more minutes...

 Sorry, we ate out of it before I could get a picture... it was delicious..!





Squash Casserole



Ingredients 

medium yellow squash - cut ends off and into thin slices
1 can Rotel
1/4 cup whole milk
1/2 cup diced onion
1 tsp black pepper
1/2 tsp salt
tsp garlic salt
1/2 lb. Velveeta - cut into small cubes
3/4-1 cup Panko crumbs
3/4 stick butter - cut into 1 Tlbs pieces


Directions 

Preheat oven to 350. Spray 1 1/2-2 quart dish. Mix all ingredients, expect butter and Panko, in a bowl. Pour into prepared dish. Cover with foil and bake for 30-45 minutes, until squash starts to soften. Stir and sprinkle Panko and drizzle butter over it. Return dish to oven and bake for an additional 30 minutes or until desired shake of brown/cooked.

Double Trouble Pasta Bake

Yummm, I got this idea and recipe from Pearls, Handcuff and Happy Hour she has amazing recipes, so check her out! 








 Mix the two jars of sauce together....




 Boil pasta, drain and mix with sauces... add in 1 cup of Parmesan cheese and 1 cup of Mozzarella.. Then top with 1 cup of Mozzarella...Bake... We added Red Pepper flakes to spice it up... after the fact, because we served it to the girls without and they LOVED it!
 If you look closely you'll see I served this on a paper plate... classy, I know! I didn't feel like doing dishes.. :)

Double Trouble Pasta Bake

1 box penne pasta
1 (15 oz.) jar Alfredo sauce
1 (24oz.) jar Marinara sauce
2 cups shredded mozzarella cheese
1 cup shredded parmesan cheese
Red Pepper flakes (optional)

Mix sauces together, cook and drain pasta, combine together, add 1 cup parmesan cheese in and 1 cup mozzerella, mix together.  Top with Remaining Mozzarella and bake at 350 for 30 minutes... add Red Pepper flakes if desired!

Monte Cristo Sandwiches


lay out 1 can of rolls... makes 4 squares..




Put honey/butter mixture on each.. bake and let cool..







stack with turkey, then another roll...

then ham and cheese... another roll...


 Then the jam... raspberry Jam...top with a roll and bake for 8 minutes...



Top with powdered sugar! yum~





Monte Cristo Sandwiches
Makes 2 large sandwiches (serves 4)

1/2 lb sliced Turkey
1/2 lb sliced Honey ham
2 tbs Butter
2 tbs Honey
2 cans (8 oz each) Crescent rolls
6-8 slices Muenster cheese
1/2 - 1 cup Raspberry Jam/Preserves

Preheat oven to 375 degrees. Unroll your crescent roll dough and seperate into 4 rectangles. Melt your butter and honey together and spread on top of rectangle dough.  Bake them for 8 minutes or golden. Then let cool.  After cooled, Place 1st crust on pan.. add 5 slices of turkey.. then top w 2nd crust.. add 5 slices of honey ham.. on top of ham add 3 slices muenster cheese. Place 3rd crust on top of cheese. Spread raspberry jam on top of 3rd crust and then place the 4th crust on top.  Bake the sandwich for at least 8-10 minutes or when the cheese has melted!
NOTE: I can only fit 4 rectangles on one baking sheet so you will have to do this process twice.. but once you have made all the rectangles, and then built your sandwiches you can bake both sandwiches together for the final heating.

Dirt Cake-Crowd Pleaser!






Dirt Cake

         8 oz. softened cream cheese
1         large cool whip, the bigger the better
1         large box of vanilla instant pudding
Three cups of milk—add this a little at a time or you will be wearing it
        1  package of crushes oreos—I use the food processor 
  ½ of the oreos on top, ½ in the pudding mix



Mozzarella Stuff Meatballs



I got this recipe from Picky Palate, it looked simple and delicious!

 

Add all ingredients in a bowl..

 Mix them together...


 Wrap the mozzarella ball in the meatball...


 cover mozzarella completely with meatball and put in pan...


 Bake in oven....


 I served with Ziti or you could serve with Spaghetti or in a meatball sandwich...



Pack the rest up for LEFTOVERS!!!!! Or, you could freeze them!

Mozzarella Stuffed Homemade Meatballs

2 tablespoons extra virgin olive oil
1 pound lean ground beef
1 large egg
1/2 cup finely chopped white onion
1/2 cup Panko bread crumbs
1/2 cup fresh grated parmesan cheese
1/4 cup milk
2 tablespoons minced garlic
1 tablespoon Worcestershire sauce
1 tablespoon yellow mustard
1 teaspoon hot sauce, like Tabasco
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon garlic salt
Ten 1-inch Mozzarella balls
1.  Preheat oven to 35o degrees F. and grease 9×13-inch baking dish with oil.
2.  Place beef, egg, onion, bread crumbs, Parmesan, milk, garlic, Worcestershire, mustard, hot sauce, salt, pepper and garlic salt into a large mixing bowl, stirring until just combined.  Take 1/4 cup beef mixture and press into center with your thumb to make room for cheese ball.  Place cheese in middle then with hands enclose the cheese with the beef, making sure the cheese is completely covered.  Place meatballs into prepared baking dish and bake for 30 to 35 minutes, until cooked through.
3.  Serve over top your favorite pasta or inside a warm roll for delicious meatball sandwich.
