Motherload Cookie Bars

I got this recipe from Picky Palate

The Mother Load Layered Cookie Bars
Layer 1: Sugar Cookie
1 Roll of Pillsbury Sugar Cookie Dough
1. Preheat oven to 350 degrees F.  Press sugar cookie dough into bottom of a 9×13 inch baking dish that’s been lined foil and sprayed with cooking spray.
Layer 2: Double Chocolate Chip Cookie
(the recipe below makes double what you’ll need for the bars, use extra for cookies)
1 cup butter
1 cup white sugar
3/4 cup brown sugar
2 eggs
1 tsp. vanilla
1 3/4 cups flour
1 1/4 cups cocoa powder (I used Hershey’s Dark Chocolate Cocoa Powder)
2 tsps. baking soda
1/4 tsp. salt
1 1/2 cups chocolate chips
1. In a large bowl, cream together the butter and sugars until light and fluffy. Slowly add eggs and vanilla until well combined.
2. In another bowl, combine the flour, cocoa, baking soda and salt. Slowly add to wet ingredients then stir in chips. Layer 1/2 the recipe over sugar cookie layer, pressing gently.
Layer 3: Peanut Butter Cookie
1 Cup creamy peanut butter
1/2 Cup granulated sugar
1 egg
1.  Place all ingredients into a bowl and mix until combined.  Press over chocolate cookie dough.
Layer 4:  Chocolate Chip Cookie
(the recipe below makes double what you’ll need for the bars, use extra for cookies)
2 sticks softened butter
3/4 Cup granulated sugar
3/4 Cup brown sugar
2 eggs
1 Tablespoon pure vanilla
2 1/2 Cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 bag chocolate chips
1.  Make sure oven is preheated to 350 degrees F.  In a stand or electric mixer cream the butter and sugars until well combined.  Beat in eggs and vanilla until combined.  Place flour, baking soda and salt into a large bolw; mix to combine.  Slowly add to wet ingredients along with chocolate chips.  Spoon 1/2 of the dough evenly over peanut butter cookie dough but don’t press, just leave uneven.  Bake for 35-45 minutes or until center of dough is cooked mostly through.  Edges will be brown.  I covered pan with foil during the last 15 minutes of baking.
2.  Let cookies cool completely.  Lift out of pan with edges of foil.  I cut off 1/2 inch edges and just used softer centers, but do as you wish.  Edges are crispier.  Drizzle top with 1/2 Cup melted chocolate chips if desired.
*Note:  You can layer dough and refrigerate until ready to bake.  This is what I did and it worked very nicely.
8 large bars (if you cut off edges), 12 bars (if you keep edges)

Mud Puddle Cookies

Mix the dry ingredients....

Chop and toast pecans....

Mix all ingredients... with wet ingredients....

Drop cookies on parchment paper... very wet "dough" because the cookies have no flour...

Yum yum all done....

Mud Puddle Cookies

Ingredients

  • 3 cups Walnuts, Toasted Cooled And Coarsely Chopped (or pecans)- I USED Pecans, because I like them better
  • 2 cups Confectioner's Sugar
  • 2 cups Splenda For Baking
  • ½ cups Plus 3 Tablespoons High Quality Cocoa, Van Houton Is Fantastic--I used regular cocoa cause I am not fancy
  • ½ teaspoons Fine Sea Salt
  • 4 whole Large Egg Whites At Room Temperature
  • 1 Tablespoon Pure Tahitian Vanilla Extract- again, I am not fancy and I used regular Vanilla Extract

Preparation Instructions

Preheat oven to 350 degrees.
Line your cookie sheet with parchment paper cut to fit.
Coarsely chop your toasted and cooled walnuts and set aside.
Sift together confectioner’s sugar, Splenda, cocoa and salt.
Stir in your coarsely chopped walnuts and add egg whites plus vanilla. Stir very well with a sturdy spoon.
Drop your dough by 2 tablespoonfuls. Place on parchment that you’ve sprayed with cooking spray. Press down just a little bit if needed.
Bake until the cookies puff, about 15 minutes depending
on your oven.
Allow to cool for a minute before removing to wire racks. Store in an airtight container.
This cookie is still fairly high in sugar but it’s a nice treat to have once in a while when you’re trying to reduce your sugar intake. I hope you enjoy them as much as I do.
Makes about 18 cookies.

Bloggy award :)

Never knew you could get blog awards, but someone gave me a shout out... yes! Gini at The Big Fat Gini Blog likes my blog and so here I am to pass it on.. (you need to check out her blog, I am rolling laughing everytime I read)

How stinkin' cute is that thing?
There are some rules
... and here they are.

1. Thank and link back to the person who gave it to you (check!)

2. Share 7 things about yourself (check!)

3. Pass the award on to 15 bloggers who you recently discovered and who you think are totally awesome (check!)

4. Contact the bloggers and let them know that they have won
----------------------------------------------------------------------------------

Alrighty, seven (only seven?) things about myself that you should all know.

1. I don't wear deodorant, I know gross right? Well, I don't sweat or smell so whats the point?  Maybe because I am an adult I probably should... but, I don't... well, I have some and occasionally will put it on for special things, like date night and such... but on a day to day I don't wear it... I know you think I'm dirty now..

2. I love pizza, probably could eat it all the time... I prefer it cold... if I had my choice I'd get it from Papa Johns and put it right in the fridge and wait an hour... but overnight is best.

3. Honestly I think my husband has had over 15 cell phones since we've met and I've only had 4, it's kinda like a purse to me, I find a good one and I could stick with it forever.

4. I hate cake and donuts... you'd think that would make me skinny, but no friends, obviously from this blog you see I find other things to make.  Any cakes I made are usually eaten by my husband or I pass them off to people.  Most of the sweets I make for the blog I take them to others, I don't like eating sweets..

5. I just bought and am starting to wear my first pair of shorts in 10 years. I have just been avoiding it but the TX heat is relentless and it finally wore me down.

6. I watch every dumb show created.. sometimes I think the TV execs think of me with Love while creating the show... but I don't watch Jersey Shore... that just tips the crap-o-meter for me and I can't want to.

7. I save travel cups from various places; such as McAlisters Deli.  My friends make fun of me but I like drinking out of a straw.. so I just keep refilling the cup until my friend has an intervention for me and she throws it away.  So if you really love me, all you need to do is buy me a cup of Iced tea from McAlisters!

And fifteen bloggers who I love and adore and stalk without their knowledge. Okay....

1.Lindsey at Better After
she has amazing transformations that I LOVE to look at and get ideas from..

She give great ideas to me for cooking for my family, they are easy great recipes.

7. The Smiths at House of Smiths

She has the funniest take on pregnancy and motherhood ... and as she likes to put it, "oversharing with the internet, you're welcome"

9. Karly at Buns in My Oven
Such good recipes... yum.. I have stole a lot of recipe ideas from her!

10.  Team Carroll at Pearls, Handcuffs and Happy Hour
honestly I think I am making everything she has ever posted for recipes... yum yum.. and she doesn't even know I exist... but I read her blog every post she makes.. it's sad for me really.. haha..

11. Sara and Kate at Our Best Bites
Love the stuff they make

Because she is crafty and my friend.. my actual friend in real life... I know, amazing right? :)

15. Last but certainly not least... Stephanie at Macaroni and Cheesecake
She has some of the most savory food and I always love seeing what she has whipped up...

Okay the last rule is I have to contact these people... I wish I could, I really do, but half of them don't know that I stalk them, so I don't want to be a creeper and post to them I gave them an award on my measly little blog, so I'll just give them the props and link them up and you can find them in return and follow them if you like! :)
