Mini Cheesecakes & Assorted Toppings

Line muffin tins with cupcake liners and put an oreo fudge creme at the bottom of each.

Creme together the cream cheese, eggs, sugar and vanilla...

Pour batter in cups and put in over for 25 minutes....

I mixed up another batch of Cookies and cream... I just added crushed up Oreos to this batch...

Pour into cups and place in oven for 25 minutes at 325 degrees...

Put in fridge to chill well, I did over night and then added these cookies before serving...

Or you could add cherry topping and some whipped cream.....

Cookies and Cream Mini Cheesecakes
  • 1 box Oreo Fudge Cream Cookies
  • 2 (8 ounce) packages cream cheese
  • 1/2 cup sugar
  • 1 tsp. vanilla
  • 2 eggs
  • Toppings of your choice
Preheat oven to 325 degrees. Line muffin pan with foil baking cups, not paper. Place a cookie in the bottom of each cup. Mix cream cheese, sugar, vanilla and eggs together till smooth. Divide between 12 baking cups. Bake for 25 minutes at 325 degrees. Cool and chill well. Top with chocolate sauce, fruit pie filling or garnish with a cookie or a chocolate kiss. Serve with love!

I made these for my brother-in-laws graduation party, so that is why I made so many different kinds... Hopefully they all taste as good as they look!

  1. Laura, those are adorable! You could do crushed peppermint and a little candy cane on top for christmas! (If you couldn't tell, I love crushed peppermint =) )
