Chicken Spinach Alfredo Lasagna


Lola's Famous Alfredo Chicken Lasagna

1 box lasagna noodles
1 1/2 stick of butter
4 cups Parmesan cheese or (2 parmesan 2 asiago)
2 egg yoke
2 cups heavy whipping cream
4 cloves of garlic minced
1 cup Mozarella
1 package of frozen spinach/thawed
8 oz of ricotta cheese
dash of oregano
1 lb of chicken boiled and shredded

boil noodles, drain and set aside. In a medium sauce pan cook garlic over medium heat, add the butter, once melted remove from heat and mix heavy whipping cream in with the egg yoke to the butter mixture. Add the cheese to the mixture and salt and pepper. Layer sauce on bottom of the pan, then lay one layer of noodles down, mix ricotta and 1 cup of parm cheese together with oregano, mix in thawed spinach. layer that on top of noodles, sprinkle chicken on top of noodles and ricotta mixture and layer one more of sauce, sprinkle with Parmesan and asiago cheese. Layer another thing of noodles, ricotta mixture and chicken and sauce, then top with Mozarella cheese. Bake at 350 for 45 minutes.


I made this recipe up and it is by far my favorite. Serve with french bread with garlic butter sauce and Parmesan cheese on top, baked in oven. Very good, goes well with lasagna~!

Strawberry Milk Chipsters








This recipe is from Picky Palate... The girls and their friend Turner had a great time making them!

Strawberry Milk Chipsters

2 sticks softened butter

1/2 Cup strawberry milk Powder, Nestles

3/4 Cup brown sugar

2 eggs

1-2 drops red food coloring

1 Tablespoon pure vanilla extract

2 1/2 Cups all purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

10 oz bag White Chocolate Chips

1. Preheat oven to 350 degrees F. In a stand or electric mixer beat the butter, strawberry milk and brown sugar until well combined. Place eggs into a bowl and whisk in 1-2 drops of food coloring. Pour into mixer along with vanilla and beat until combined, about 30 seconds. Place four, baking soda and salt into a large bowl; mix to combine then slowly add to wet ingredients along with white chips. Mix on low until just combined.

2. With a medium cookie scoop, scoop dough onto a silpat or parchment lined baking sheet about 1 1/2 inches apart. Bake for 9-11 minute or until edges just start to brown. Let cookies cool for 5 minutes before transferring to a cooling rack.

Chicken Pot Pie

Thank you Courtney for sharing this easy recipe!
I made them in individual pans for fun, if you are having company, it's a nice little meal to make, you might want something fancy, but this is nice for those guests that are family!



Chicken Pot Pie

Ingredients

1 16 oz bag of veggies (peas, corn, carrots, etc) thawed
3 ish chicken breasts ALMOST fully cooked diced (I cook it till its a little pink in the middle)
1 - 2 cans cream of something - onion, chicken, mushroom,(I like to use 2 to mix flavors)I used Cream of Chicken and Cream of Poblano
2 servings of Bisquick (egg, milk, water, powder)
Shredded cheddar
Butter

Preheat Oven to 400

Begin thawing the veggies (just put the bag in hot water), and cooking the chicken (i do it on the stove with a splash of water to keep it moist). Make 2 servings of bisquick in a bowl -- add as much or as little shredded cheese as you like.

lightly grease round or rectangle baking dish, or use those individual throw away dishes like I did. Mix together veggies, soup, and diced chicken and spread evenly across dish. Pour Bisquick mixture over top of soup/veggie mixture. Put in oven for 25 minutes or until brown. Melt about 2 tablespoons of butter. Spread over browned Bisquick top and place back in oven for 2 minutes.

Remove, poke a few holes, let it cool for 5, then serve.

Chicken Fettuccine Alfredo... really creamy!

This is a family recipe from my mother in law, but I am pretty sure I added some things to make it more fattening! haha, also, I cook all the sauce in one pan until it thicken's up, and add asiago cheese sometimes, I think it tastes like the Olive Garden's!


Chicken Fettuccine Alfredo

1 box fettuccine noodles
1 stick of butter
2 cups Parmesan cheese or (1 parmesan 1 asiago) I think when you mix the two it tastes delicious!
1 egg yolk

Paula Deen's Gooey Butter Cake

I made this for a twin-mom who just had her twins and I figured after I had twins I wanted some comfort food to comfort me! haha, this did the trick, it is so rich and good, you want to eat the entire thing!
The cake batter crust, I recommend using a larger square glass baking dish, but I used these to make it easier so my friend didn't have to return any dishes to me.
Spread the top on and bake
Honestly when you peel that outside crust off, it's like heaven to eat!

Paula Deen's Gooey Butter Cake

Ingredients:

Cake:
1 18 1/4-ounce package yellow cake mix
1 egg
8 tablespoons butter, melted

Filling:
1 8-ounce package cream cheese, softened
2 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 16-ounce box powdered sugar

Directions

Preheat oven to 350 degrees F.

Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan. Prepare Filling

In a large bowl, beat the cream cheese until smooth. Add the eggs, vanilla, and butter and beat together.

Next, add the powdered sugar and mix well. Spread over cake batter and bake for 40 to 50 minutes. Make sure not to over bake as the center should be a little gooey.

Servings: 6 to 8 servings
Prep Time: 30 min
Cook Time: 40 min
Difficulty: Easy

Sara's German Chocolate Cheesecake Cupcakes



These are the famous cupcakes made at all our Twin Mom Garage Sales and anything else we can convince Sara to bring them too! Sara however is moving soon :( so I snagged the recipe from her so I could continue her good eats after she left! I made them for our first annual Neighborhood Cook out yesterday, however, I didn't get to eat any and some melted in the sun! Everyone who ate them loves them.. so... you might too! I am not a fan of coconut usually, but this has just a little in it, barely taste it. However, I thought a fun twist would be to toast the coconut! That might make it more delicious, so try and tell me!


Sara's German Chocolate Cheesecake Cupcakes

1 box of German Chocolate Cake (add all ingredients)
1 can of cream cheese frosting
1 bag of mini chocolate chips (1/2 cup used in filling, the rest sprinkled on top of cupcakes)
1/2 cup of coconut (you can toast it in oven if you'd like, try it, please?)
8 oz block of cream cheese
1/2 cup sugar

Filling Directions:
beat 8oz cream cheese, 1/2 cup of sugar, 1/2 cup of coconut, fold in 1/2 cup of chocolate chips.

Directions:
make up cake mix according to directions, pour in cupcake liners. Mix up filling and drop in the batter. 1 spoon full in each cupcake. Bake according to directions, frost and sprinkle chocolate chips on top.

Bill Knapps Chocolate Cake



My friend Keelin has her mom make this cake every year for her birthday, it is her birthday cake. Her mother so graciously gave me the recipe! I didn't try it, but I made it for Daniel's bday and he said it was good, he is still eating from it!

Bill Knapps Chocolate Cake

4oz of Bakers Chocolate (I would recommend more)
2 1/4 cup sifted flour
2 tsps baking soda
1/2 tsp. salt
1/2 cup butter
2 1/4 cup brown sugar
3 large eggs
1 1/2 tsp Vanilla
1 cup sour cream
1 cup boiling water

Grease and flour two cake pans, melt chocolate in microwave. Cream butter in large bowl, add brown sugar and eggs, beat at high speed for 5 minutes, stir in flour, baking soda, salt, vanilla and sour cream. Beat with a wooden spoon until batter is smooth, add in boiling water and stir. Bake in oven for 35 minutes at 350.


Frosting


4 oz bakers chocolate melted (i used more)
1/2 cup butter melted
1 lb of powdered sugar
1/2 cup of milk
1 tsp vanilla

Combine all and beat with wooden spoon over bowl of ice until thickens up. Spread on cake.

La Madeleine Red Pepper Soup



La Madeleine Red Pepper Soup

You can make the La Madeleine Red Pepper Soup at home with this recipe. Nothing beats the taste of this restaurant fresh red pepper soup. The secret recipe is out, you can make this recipe at home.

1/4 C. Olive Oil
1 Tbsp. Fennel Seed
1 C. chopped Onion
1/2 tsp. Thyme
1/2 Bay Leaf
1/2 tsp. minced Garlic
1 Tbsp. Fresh Basil
6 Red Bell Peppers – seeds and ribs removed
2 Tbsp. minced jalapeno
1/4 C. Flour
5 C. Chicken Stock
2 tsp. Tomato Paste
1/4 C. chopped fresh Tomato
1 C. Heavy Cream
Salt and Pepper to taste

In a heavy saucepan, heat olive oil over medium heat and add the onions, fennel seeds, thyme, bay leaf, garlic, basil, red pepper, and jalapeno pepper. Saute the vegetables over low heat until wilted, about 10 to 15 minutes. Add flour and stir over low heat about 10 minutes to cook the flour. Add the chicken stock, whisking until smooth, along with the tomato paste and fresh tomatoes. Cook the soup over medium heat, partially covered for about 45 minutes. Puree in a blender or food processor. Return puree to pan and add cream and simmer for about 10 minutes. Taste for seasoning, add salt and pepper to taste.

Kourtney's Krazy Kream Cheese Enchilada's




My friend Kourtney makes these amazing enchilada's. This particular night she made them for me and took pictures and then brought them to my house. I have made them once and they were easy to make, so here is the recipe, hope you enjoy them too! They are SOOOO good!

Kourtney's Krazy Kream Cheese Enchiladas


1-2lbs. if ground meat
large can of enchilada sauce
2 packs of enchilada seasoning
8 oz. of cream cheese
16 oz. of shredded cheese
10-15 medium size tortillas
large can of tomato sauce


Cook the ground meat, drain, and add 1 pack of enchilada seasoning. Cut cream cheese in desired size strips. Mix can of tomato and enchilada sauce together in a saucepan, add the other enchilada seasoning. Cook on low heat for a few minutes. Spray dish with Pam, pour the sauce on the bottom of the pan. Dip the tortilla in the sauce, add shredded cheese, cream cheese, meat and roll...repeat until all are done. Pour the remaining sauce on the top and cover with shredded cheese. Cook at 350 degrees for 30-40 minutes covered with foil.

Stuffed Pork Tenderloin








1 large pork tenderloin (Trish suggested getting the large pork tenderloin from Costco, so that it what we got)
2 (8oz) pkg, cream cheese (we used about 2 1/2)
1 jar roasted red peppers
1 pkg bacon, cooked, crumbled
2 pkgs. dried pesto seasoning (like Knorr brand, can be found by the gravy/dressing mixes)
Spinach leaves, fresh (to taste)
olive oil
salt & pepper
paprika

If you are using the large tenderloin from Costco, cut it almost in half, then cut the halves almost in half again so that you kind of unfold it a few times and try to pound it out flat. (If you are using another kind of pork tenderloin, try to spread it out and get it nice and flat). Once the tenderloin is flat and has a good surface area, spread the cream cheese all over the top. Lay the roasted red peppers over the cream cheese then sprinkle on the crumbled bacon.

Evenly sprinkle on the packages dried pesto seasoning and lay the spinach leaves all over the top. Roll the pork up (like you would if you were making cinnamon rolls) and tie it shut with 3 or 4 things of kitchen twine. or use toothpicks, that is what I used... it was all I had! Next, rub olive oil, paprika, salt and pepper all over the pork and place in a greased baking dish (you might have to cut it in half for it to fit) or you can put it on a greased cookie sheet. Bake at 350-degrees about 60-90 minutes or until pork is cooked through. Once cooked, slice and serve!

**This makes quite a lot. After rolling, but before baking, cut it into thirds or fourths. Wrap in plastic wrap and freeze!
