Skinny Baked Chicken Parmesan

So I got this recipe from www.skinnytaste.com, I pinned it on pinterest! I love this recipe, tastes so delicious, quick, easy and fool proof!

Baked Chicken Parmesan
Gina's Weight Watcher Recipes
Servings: 8  Serving Size: 1 piece • Old Points: 5 pts • Points+: 6 pts 
Calories: 224.5 • Fat: 8.6 g • Protein: 25.1 g • Carb: 14.2 g • Fiber: 1.3 g    


  • 4 (8 oz) chicken breast halves, sliced in half
  • 3/4 cup seasoned breadcrumbs (I used whole wheat breadcrumbs)
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp butter, melted
  • 3/4 cup reduced fat mozzarella cheese (I used HEB brand)
  • 1 cup marinara or Filetto di Pomodoro (I used Marinara)
  • cooking spray
Preheat oven to 450°. Spray a large baking sheet lightly with spray.

Combine breadcrumbs and parmesan cheese in a bowl. Melt the butter in another bowl. Lightly brush the butter onto the chicken, then dip into breadcrumb mixture. Place on baking sheet and repeat with the remaining chicken.

Lightly spray a little more cooking oil on top and bake in the oven for 20 minutes.Turn chicken over, bake another 5 minutes. Remove from oven, spoon sauce over chicken and top with shredded cheese. Bake 5 more minutes or until cheese is melted.

Serve this over spaghetti and it makes the perfect little meal! I brought this to a friend who started her teaching week and her husband was gone, so she needed something to eat and feed the kids, her daughter ate it and my kids ate it! AND it's figure friendly!

 These were small skinless, boneless cutlets, worked perfectly!

Skinny Meatloaf Cupcakes With Mashed Potato Frosting


 Mix ingredients together...
 put in muffin tins

 make mashed potatoes... put in bag to pipe it on.. this made it easier for me!

Ingredients:

For the Meatloaf Cupcakes:


  • 1.3 lb 93% lean ground turkey
  • 1 cup grated zucchini, all moisture squeezed dry with paper towel
  • 2 tbsp onion, minced
  • 1/2 cup seasoned breadcrumbs
  • 1/4 cup ketchup
  • 1 egg
  • 1 tsp kosher salt

For the Skinny Mashed Potato "Frosting":

  • 1 lb (about 2 medium) Yukon gold potatoes, peeled and cubed
  • 2 large garlic cloves, peeled and halved
  • 2 tbsp fat free sour cream
  • 2 tbsp fat free chicken broth
  • 1 tbsp skim milk
  • 1/2 tbsp light butter
  • kosher salt to taste
  • dash of fresh ground pepper
  • 2 tbsp fresh thyme

Directions:

Put the potatoes and garlic in a large pot with salt and enough water to cover; bring to a boil. Cover and reduce heat; simmer for 20 minutes or until potatoes are tender.Drain and return potatoes and garlic to pan. Add sour cream and remaining ingredients. Using a masher or blender, mash until smooth. Season with salt and pepper to taste.

Meanwhile, preheat the oven to 350°.
 Line a muffin tin with foil liners.

In a large bowl, mix the turkey, zucchini, onion, breadcrumbs, ketchup, egg, and salt. Place meatloaf mixture into muffin tins filling them to the top, making sure they are flat at the top. 
Bake uncovered for 18-20 minutes or until cooked through. Remove from tins and place onto a baking dish.

Salmon Packets-Healthy Alert!


Wrap fish in foil with veggies and oil, wine plus lemon juice

Bake until fish is flaky, serve... soo quick, healthy and delicious!
Salmon Packet
This is my quick fix meal that is super healthy.
Ingredients
2 salmon filets {I prefer fresh}
1 red bell pepper, sliced (Don't substitute green pepper, doesn't taste good)
Sugar Snap Peas {I use one handful per pack}
Salt & Pepper
Extra Virgin Olive Oil
Lemon Juice
White Wine

Directions
Heat oven to 400F.
Tear off sheets of aluminum foil for your packs. Fold edges up to prevent liquid from spilling.
Slice bell pepper and put half in one packet, half in the other.
Place handful of peas in each packet.
Season with salt & pepper.

Drizzle olive oil (about a tsp) on top of vegetables.
Pour 1 tbsp of wine on veggies.
Pour 1 tsp of lemon juice on veggies.
Place salmon, skin side down, on top of veggies.
Season with salt & pepper.

Drizzle olive oil (about a tsp) on top of salmon.
Pour 1 tsp of lemon juice on salmon.
Fold edges of tin foil in. Place on cookie sheet and bake for 20 minutes or until salmon is flaky and no longer pink.

This will serve 2. You can adapt the recipe as needed.

Turkey Tomato Grill Cheese


Spray bread with spray butter, or real butter, whatever you choose, put dijon mustard, then provolone cheese, then tomatoes on top.
Add the turkey
top with bread of your choice (I used "diet" bread as Daniel calls it)
Cut open for the yum

3 slices Lunch meat Turkey
4 Slices of Tomato
2 Slices of bread of your choice
2 slices Provolone cheese
2 tbsp Dijon Mustard

Whole Wheat White Sauce Tomato Pizza

I was worried about this pizza to be honest and it turned out sooo good! Even Daniel liked it. Very healthy whole wheat crust, part-skim ricotta cheese... the weight watchers points are 4 pts a slice!
The dough, getting ready to rise! Let sit for 1 hour
The dough has doubled in size, then you punch it down and kneed it, let sit for 10 minutes before baking it.
Slice up some fresh tomatoes!
Pre-bake crust for 5 minutes, this is what it looks like prior to topping it
Topped with the toppings, yum, then put it in the oven for 12 minutes, broil for 2 to brown crust

Finished product, it was soooo good!
Cut and eat, very delicious!
Recipe:
Whole Wheat Pizza Dough

Ingredients:
1 cup whole wheat flour
1 cup all purpose flour
2 1/4 teaspoons instant yeast (One packet)
1 teaspoon salt
1/2 teaspoon sugar
3/4 cup warm water
1 tablespoon olive oil

Directions:
Combine flours, yeast, salt, and sugar in a stand mixer, using the dough hook attachment, mix on low speed.
Combine warm water and oil in a measuring cup.
With the motor running on low speed, gradually pour in enough of the liquid until the mixture forms a sticky ball. The dough should be quite soft. If it seems dry, add 1 to 2 tablespoons of warm water; if too sticky, add 1 to 2 tablespoons flour.
Mix until the dough forms a ball, then increase the speed to medium and mix for 1 minute to knead.
Lightly coat a large bowl with cooking spray. Place dough inside, turning to coat. Cover with plastic wrap or a damp towel and let rise about an hour, or until doubled in size.
Punch down and let the dough rest for about 10 minutes before rolling.
*If you want to knead by hand feel free - knead for about 10 minutes.
As made, this recipe makes about 1 pound of dough.

To Bake:
Preheat oven to 400 degrees.
Sprinkle a little cornmeal on a clean surface and roll out the dough, use your hands to stretch it out. Place on sprayed pizza pan and spread out to desired thinness and size.
Pre-bake dough in oven for 3-4 minutes. Add desired toppings and bake until crust is golden brown and cheese is melted and bubbly, approximately 12 minutes or so.

White Tomato Pizza

Ingredients:
Approx. 1/4-1/2 cup part skim ricotta cheese
2 cups 2 % shredded mozzarella cheese
Sliced Tomatoes
1/4 tsp. Garlic Powder
1/4 tsp. kosher salt
Parmesan cheese & chopped parsley or basil for serving

Directions:
Preheat oven to 400 degrees. Pre-bake crust for 4-5 minutes. Spray crust with cooking spray and sprinkle with garlic powder. Top crust with ricotta, mozzarella and tomatoes, sprinkle with salt. Bake for approximately 10 minutes, then watching closely Broil for about 1-2 minutes until crust is golden brown and cheese is bubbly. Serve and top with parmesan cheese & parsley if desired.


Daniel said he'd eat it again, so that is the true test of it's good!
