Beef, Bean & Cheese Burritos

Beef, Bean & Cheese Burritos

1.5 lbs ground Beef
1 can Mexican Red sauce
2 Cups shredded Sharp Cheddar Cheese
10 Burrito Sized Tortillas
1 large can refried Beans
1 onion

Chop/dice onion and toss in pan while you brown your ground beef.  Once beef is browned add in 3/4 can of the Red sauce. Let simmer on low heat for 10 minutes.  If you can't find red sauce use Enchilada sauce.  Then mix together the refried beans and 1.5 cups of the cheddar cheese in a sauce Pan until they are both combine! Spoon meat mixture onto tortillas, then bean mixture and roll into burritos! Lay in baking dish, top with remaining red sauce and then sprinkle with remaining cheese! Bake at 350 for 10 minutes!

My family LOVED them! Begged to make again and they were so simple! Ya'll know me, I am ALL about simple!

Southwest Chicken Tacos (On The Border Style)


So I set out to recreate one of my favorite recipes from On The Border! Their Southwest Chicken Tacos are Amazing and I wanted to try to make something similar! Here is what I did:

Southwest Chicken Tacos

1 onion cut into thin rings (or use french onion crisps)
1/2 cup black beans
1/2 bag frozen grilled chicken chunks
1 cup shredded Mexican Cheese
1/4 cup Ranch Dressing
1/2 packet taco seasoning
2 tbsp BBQ Sauce
2 tbsps panko crumbs
10 pack Tortillas


I sautéed the onion in a little olive oil and then added a tbsp of BBQ Sauce, toss in the panko crumbs. Then I added in the frozen pre cooked chicken chunks, I think I used Tyson Brand.  Mixed those with the onion and let it all kinda caramelize together.  Then I took the Tortillas, put the chicken/onion mixture in the tortilla, mixed the black beans, topped with cheese and pour ranch mixture on top! To make Ranch cream mixture: mix Ranch dressing, taco seasoning and 1 tbsp of BBQ sauce together.  Then I heated this all in the microwave until the cheese melted... real classy huh? You could put it in the oven but It didn't need that! 30 secs in the microwave got it ready to serve! Yum!

Trader Joe's Mini Mexican Pizza's


Mexican Pizza Recipe

Ingredients

  • 1/2 pound Trader Joe's Ground Beef or Ground Turkey
  • 1 medium onion, diced
  • 1 clove garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 15-oz can Trader Joe's Traditional Style Fat Free Refried Beans
  • 4 9-inch flour tortillas
  • 1/2 cup Trader Joe's Chunky Salsa, or your favorite salsa
  • 2 cups Trader Joe's Lite 3 Cheese Blend, or mexican blend cheese
  • 2 green onions, chopped
  • 2 roma tomatoes, diced
  • 1/4 cup Trader Joe's Extra Large Black Pitted Olives, sliced (I omitted Black olives)

Instructions

  1. Preheat oven to 350°F.
  2. Place meat, onion and garlic in a skillet over medium heat. Cook until beef is evenly browned. Drain off grease. Season the meat with chili powder, cumin, paprika, salt, and pepper.
  3. Coat 2 pie plates with non-stick cooking spray. Place one tortilla in each pie plate and cover with a layer of refried beans. Spread half of the seasoned meat over each tortilla and then cover with a second tortilla. Bake for 10 minutes in the preheated oven. Remove from the oven and allow to cool slightly.
  4. Spread half of the salsa over the top tortillas. Top each pizza with half of the cheese, tomatoes, green onions, and olives. Return the pizzas to the oven, bake until the cheese is melted, about 5 to 10 minutes. Remove from the oven and allow to cool slightly. Slice each pizza into 4 pieces and serve.

Mini Mexican Pizzas


 Cut Tortillas and arrange them...
 put mixed up meat mixture into the cups...
 Top with cheese and green onions and bake...




Mini Mexican Pizza's
1lb of Ground Beef
1 can of Salsa
1 can of Refried Beans
1 Package of Taco Seasoning
2 Cup of Mexican Cheese Blend
6-9 Tortillas (when they are cut smaller you need less to make 12 mini's)


Preheat oven to 425 degrees. Spray a 12 count muffin tin with non-stick cooking spray.

Start by laying each tortilla out individually on a flat surface, and use an empty can, glass cup, or cookie cutter to cut 3-4 medium circles out of each wrap. ( I only had an oval cookie cutter, so I used it and it worked fine)

Press each wrap circle into muffin tin using your fingers. (Note: it doesn’t have to cover the entire side of the tin, it should just fit snuggly!)

Meanwhile, in a small bowl, mix together the ground meat, salsa, taco seasoning, and refried beans. Stir until well combined.

Scoop 1/8th cup of meat mixture into each wrap
Top with shredded cheese, (dividing evenly between each pizza), and olives if desired, (I used green onions instead because I like that better
Bake in pre-heated oven for 12-15 minutes, or until cheese is melted
Wait for mini Mexican pizzas to cool, and remove from muffin tin using a fork or knife. Pizza’s should pop out with ease!

Serve with a side of salsa, low fat sour cream, chopped tomatoes, and/or shredded lettuce if desired!

Cornbread Skillet Bake

This was so so so delicious, I'm for sure adding it to the rotation...

 Brown meat, onion and red pepper
 mix up jiffy and add mexi corn and green chiles to it...
 put 1/2 the jiffy on bottom, layer with cheese
 then meat mixture
 cheese on top
 then rest of jiffy mix and cheese on top of that, bake in oven... yum





Mexican Cornbread Skillet

For the filling:
  • 1 lb ground beef
  • 1 small onion, chopped (optional)
  • 1 red bell pepper, chopped
  • 2 small tomatoes, chopped (1/2 cup of salsa would be great if you prefer)
  • 1/2 cup shredded cheddar cheese
  • 1 cup monterey jack cheese
  • 1 packet taco seasoning (or your own recipe for seasoning mix)
  • drizzle of olive oil
Drizzle some olive oil in a large skillet and heat it over medium heat. Saute the onions and bell peppers for a few minutes and then add the ground beef, breaking it up into small pieces just as you would for tacos. Cook until no longer pink and then drain. Stir in the tomatoes and taco seasoning. Remove from the heat and get to work on the cornbread.
For the cornbread: ( I used jiffy and added mexi corn & green chilies to it)
  • 1 3/4 cups cornmeal
  • 1 cup all-purpose flour
  • 2 eggs
  • 2 1/3 cups milk (buttermilk, if you have it!)
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2/3 cup corn (frozen or canned work, fresh is best!)
  • 1 small can green chiles
  • butter, for greasing the skillet
Preheat the oven to 400 degrees and grease a cast iron skillet with butter. In a large bowl, combine the dry ingredients. In a separate bowl crack the eggs and stir in the milk. Pour wet ingredients into the dry ingredients and mix in the corn and green chiles. Mix well and let sit for 10 minutes to soften the cornmeal.
Pour half of the cornbread mixture into the bottom of your greased skillet. Spoon the meat mixture on top and cover with both cheeses. Spread on the remaining cornbread mixture. Bake for 30-40 minutes or until the cornbread is golden brown and cooked through.

7-Layer Bean Dips!

These were a huge hit for Daniels 30th Birthday Party!

 Lay your cups out..
 layer them (I doubled the recipe to make more than 8 for the party) I did some fully loaded, some half loaded and some with just beans, guac, cheese!

Individual Seven-Layer Dips

Makes about 8 individual dips

*Note: All measurements are approximate. Depending on whether you want thicker or thinner layers you will need more or less. ( I doubled this recipe)
1 (16 ounce) can refried beans
1 (1 ounce) package taco seasoning (I would use 2 of these 1 for beans and 1 for sour cream)
1 cup guacamole or make homemade guacamole
1 (8 ounce) container sour cream
1 cup chunky salsa or pico de gallo; or make homemade pico de gallo
1 cup shredded cheddar or Mexican blend cheese
2 Roma tomatoes, diced
1/2 bunch of green onions, sliced
1 (2.25 ounce) can of sliced olives, drained
9 ounce plastic tumblers
tortilla chips

Directions:
In a small bowl mix taco seasoning with refried beans. I didn't mix the taco seasoning in the sour cream this time, but next time I would mix another packet of taco seasoning with the sour cream, I think it would add a little more something! 

Here's how the layers are assembled:
Layer 1: beans and taco seasoning
Layer 2: guacamole
Layer 3: sour cream
Layer 4: salsa or pico de gallo
Layer 5: cheese
Layer 6: tomatoes
Layer 7: green onions and olives

In each plastic glass, layer about 2 Tablespoons of the beans, followed by 2 Tablespoons of guacamole, 2 Tablespoons of sour cream, 2 Tablespoons of salsa or pico de gallo, and 2 Tablespoons of cheese. Make sure you drain your salsa or pico to get the excess liquid out before you pour it on. Then top with about 1-2 teaspoons of tomatoes, olives, and green onion (If making ahead of time, wait to add these toppings until shortly before serving).

Garnish with one tortilla chip. Store in the refrigerator until serving and serve with chips. Makes around 8 individual dips.

Salsa Chicken

 mix all ingredients and bake....how easy!!

Salsa chicken

2-3 boneless chicken breasts
1 large jar salsa (i used pace)
1 can mexi-corn
1 can black beans
2 cups cheddar cheese

Cut up chicken in chunks, layer on a 9 x 13 pyrex dish, dump remaining ingredients on top except cheese. Mix up and bake for 35 minutes at 350. Put cheese on top and bake until cheese melts. Serve with chips and sour cream on top!

Cornbread Mexi-Casserole

This was so easy, quick and good...

 Jiffy corn mix... I doubled it..

 Brown the meat....

 Once meat is browned, mix in taco seasoning and hominy, 1 can drained..

 Layer meat/corn mixture on bottom of dish
 top with cheese, then jiffy mix..

 Bake, 30 minutes if you doubled the recipe...



Cornbread Mexi-Casserole
(I doubled the recipe)
1lb. ground beef
1 packet of taco seasoning
1 1/2 cups of shredded cheese {I used the Mexican style cheese blend}
1 box of JIFFY corn muffin mix  
1 can of Hominy

Preheat ovhn to 400 degrees.  Brown meat in pan.  Drain and stir in taco seasoning & 3/4 cup water.  Cook on low for 5 minutes, add in hominy.  In a separate bowl, mix the corn muffin mix according to the package.  Remove meat from stove & place in an 8x8 baking dish. or a 9x11 if you are doubling the recipe like I did above.  Cover with cheese.  Take the corn muffin mixture and pour on top of the cheese.  Cook for 20-25 minutes or until golden brown, mine took about 25 minutes.

Quesadilla Casserole




I used McCormick Recipe inspirations Seasoning packet: Quesadilla Casserole found in Spice aisle of grocery store

Quesadilla Casserole
Makes 8 servings.
Prep Time: 15 minutes
Cook Time: 25 minutes
1 pound ground beef
1/2 cup chopped onion
2 cans (8 ounces each) tomato sauce
1 can (15 ounces) black beans, drained and rinsed
1 can (8 3/4 ounces) whole kernel corn, undrained
1 can (4 1/2 ounces) chopped green chiles, undrained
6 flour tortillas (8-inch)
2 cups shredded Cheddar cheese
1. Preheat oven to 350°F. Brown beef and onion in large skillet on medium-high heat; drain. Add tomato sauce, beans, corn and green chiles; mix well. Stir in all of the Spices except Red Pepper. Bring to boil. Reduce heat to low; simmer 5 minutes. Add Red Pepper to taste, if desired. 

2. Spread 1/2 cup of the beef mixture on bottom of 13x9x2-inch baking dish sprayed with no stick cooking spray. Top with 3 of the tortillas, overlapping as needed. Layer with 1/2 of the remaining beef mixture and 1/2 of the cheese. Repeat with remaining tortillas, beef mixture and cheese. 

3. Bake 15 minutes or until heated through. Let stand 5 minutes before serving.


Super easy, totally recommend making it especially in a pinch... the packets are under $2, deal!

Frito Pie

 Brown meat..
 Use some time of chili in a can... This is the brand I used... or you can make your own chili

 One layer of Fritos...



 Put Chili on top, more Fritos and then cheese... yummy!


Frito Pie

1lb of beef browned
1 can of premade chili mix or your own chili made..
1 cup of Fritos
1 Cup of Cheese

Brown the meat, add chili mix.. Layer in a bowl, Fritos, Chili, Fritos, Chili, Cheese...
