South Of The Border Sandwiches


This Sandwich was so yummy!!

 Cut the french bread and lay it out on the Baking sheet
 Chop olives and green onions
 Mix in sour cream and chili powder & Mayo
 Spread on bread
 top with turkey
 Tomatoes
 top with avocados then cheese!
 Bake until cheese melts! yum!!

South Of The Border Sandwiches

 Ingredients:
1 loaf French bread, cut into 3/4" thick slices
½ cup olives, chopped
½ teaspoon chili powder
½ teaspoon ground cumin
¼ teaspoon salt
1/3 cup lite mayonnaise
1/3 cup nonfat sour cream
1/3 cup green onions, chopped
1 pound sliced turkey
2 medium tomatoes, thinly sliced
2 ripe avocados, sliced
¾ cup cheddar cheese, shredded
¾ cup pepper jack or Monterey Jack cheese, shredded

Instructions:
Preheat oven to 350 degrees.

In a bowl, combine olives, chili powder, cumin, and salt; set aside 2 Tablespoons of this mixture. Add the mayonnaise, sour cream, and green onions to the remaining olive mixture. 

Place bread on an ungreased baking sheet and spread 1 Tablespoon of the mayonnaise mixture on each slice. Top with slices of turkey and tomatoes. Spread with another Tablespoon of mayonnaise mixture (I didn't add this because I didn't think it needed it). Top with avocados and cheeses. Sprinkle with the reserved 2 Tablespoons of olive mixture. Bake @ 350 for 15 min. Makes 8-10 servings.

Hawaiian BBQ Pulled Chicken Sandwiches

 Daniel of course had 2... so don't think it was the pregnant girl who ate both! :)









Hawaiian BBQ Pulled Chicken Sandwiches
  • 3 pounds Boneless Chicken Breast, Thighs Or A Combo Of The Two
  • 1 whole Onion (large), Sliced Into Chunks
  • 1 can (20 Oz. Size) Pineapple, I Recommend Crushed, Drained But Reserve The Juice If Using (See Note Below)
  • 1 bottle (18 To 20 Oz. Size) BBQ Sauce Of Your Choice (Our Favorites Are Sweet Baby Ray's Or Open Pit If We Want To Give It A Little More Of A Kick)
  • Hamburger Buns Or Kaiser Rolls
If you use frozen chicken, make sure it is completely defrosted. If you cook it frozen, it will indeed cook but it will make a very “wet” sauce. Place your chicken in the bottom of the crock pot. Top with onions, then pineapple. Pour the entire bottle of BBQ sauce over the whole thing.
Note: If you want a sweeter BBQ, add up to half a cup of the pineapple juice you drained, depending on how sweet you want it. This is optional.
Turn your crock pot on LOW and cook for 8–10 hours (or on HIGH for 4–6).
An hour or two before it is finished cooking, carefully remove the chicken from the crock pot and shred it using two forks. Watch out, it will be hot! Place chicken back in the crock pot and stir well to combine. Finish cooking an additional hour or two so the chicken can absorb most of the sauce. Serve on hamburger buns and top with coleslaw if desired.
Note: When I had made it with Sweet Baby Ray’s and pineapple juice, it was a very sweet Pulled Chicken. It was great, and everyone loved it. But I have to say, using Open Pit BBQ Sauce and no pineapple juice was hands down our favorite! It had just the right amount of sweet and vinegar that we love in a good BBQ.
If you are making this for kids, children tend to like the sweeter variety.

Monte Cristo Sandwiches


lay out 1 can of rolls... makes 4 squares..




Put honey/butter mixture on each.. bake and let cool..







stack with turkey, then another roll...

then ham and cheese... another roll...


 Then the jam... raspberry Jam...top with a roll and bake for 8 minutes...



Top with powdered sugar! yum~





Monte Cristo Sandwiches
Makes 2 large sandwiches (serves 4)

1/2 lb sliced Turkey
1/2 lb sliced Honey ham
2 tbs Butter
2 tbs Honey
2 cans (8 oz each) Crescent rolls
6-8 slices Muenster cheese
1/2 - 1 cup Raspberry Jam/Preserves

Preheat oven to 375 degrees. Unroll your crescent roll dough and seperate into 4 rectangles. Melt your butter and honey together and spread on top of rectangle dough.  Bake them for 8 minutes or golden. Then let cool.  After cooled, Place 1st crust on pan.. add 5 slices of turkey.. then top w 2nd crust.. add 5 slices of honey ham.. on top of ham add 3 slices muenster cheese. Place 3rd crust on top of cheese. Spread raspberry jam on top of 3rd crust and then place the 4th crust on top.  Bake the sandwich for at least 8-10 minutes or when the cheese has melted!
NOTE: I can only fit 4 rectangles on one baking sheet so you will have to do this process twice.. but once you have made all the rectangles, and then built your sandwiches you can bake both sandwiches together for the final heating.

The Marlboro Man Sandwich (Pioneer Woman)



 Chop onions, place in 4tbsp of butter...

 Cut meat against the grain...


 Remove the onions and put the meat in 2 tbsp of melted butter... add in the Worcestershire sauce and hot sauce..

 add in onions to the cooked meat in the sauce...
 butter and brown the bread..

Recipe: The Marlboro Man Sandwich

Ingredients

  • 1 whole Large (or 2 Small) Onions
  • 2 sticks Butter (lots And Lots Of Butter)
  • 2 pounds (to 3 Pounds) Cube Steak (tenderized Round Steak That's Been Extra Tenderized)
  • Lawry's Seasoned Salt (or Similar Seasoned Salt)
  • ½ cups (approximately) Worcestershire Sauce
  • Tabasco Sauce, To Taste
  • 4 whole French/deli Rolls (earthgrains Are Best!)

Preparation Instructions

Slice onions and cook in 1/4 stick butter until soft and light brown. Remove and set aside.
Slice cube steak against the grain. Season with Lawry’s.
Heat 2 tablespoons butter over high heat (in same skillet) until melted and beginning to brown. Add meat in single layer. Cook one side until brown, then flip and cook until brown, about a minute on both sides.
Add 1/2 cup (at least) Worcestershire sauce, 5 to 6 shakes Tabasco, and 2 tablespoons butter. Add cooked onions. Stir to combine.
Butter halved French rolls and brown in skillet.
To assemble, lay bottom half of French roll on plate. Place meat mixture, followed by a spoonful of juice from the pan. Top with other half of roll, cut in half, and devour!

BBQ Pulled Pork

Put the onions and garlic in the bottom of the crock pot...

Put Pork on top... pour 1 bottle and 1/2 on the Pork...Put lid on and let simmer for 8 hours...

Classic Southern dish, yum yum... I love making this to eat off of for weeks! Usually we eat it on buns, but I forgot them, so just pretend.


BBQ Pulled Pork
  • 1 large pork shoulder or butt (bone in)
  • 2 tbsp olive oil
  • 2 onions, sliced
  • 4 cloves of garlic, smashed
  • 1/2 cup water
  • 1 1/2 bottles of your favorite bbq sauce (I used Sweet Baby Ray’s Original)
In a heavy stock pot or dutch oven, heat olive oil over medium-high heat. Trim off some of the visible fat, but not all. Lightly brown all non-fat sides of the meat in the heated oil.
Place onions, garlic and water in the bottom of crockpot. Transfer browned pork to crockpot and place on top of onions and garlic. Cover pork and onions with bbq sauce. Cover crockpot and cook for 8 hours on low.
When finished cooking, remove pork from crockpot and shred with two forks. Combine shredded pork with remaining bbq and onion mixture. Serve alone, on hamburger buns or on hard sandwich rolls.
Prep time: 10 minutes
Cook time: 8 hours
Serves: 6-8

Caprese Grilled Sandwich

Please, is there nothing better than fresh tomatoes, basil, pesto, fresh mozzarella cheese on french bread? yes please! I found this recipe on Dishin and Dishes blog and so glad that I made it.  I also made this Pesto for the sandwich and it was perfect to compliment this sandwich.
Slice up french bread, melt butter and brush on, lay bread on buttered side down, top with mozzarella and fresh tomatoes, I salt & peppered mine!

Lay Basil on top
Spread pesto on the top slice of bread and butter the top of it and lay it on, flip and repeat till brown!

Yum!

1 ripe tomato
8 oz of fresh mozzarella (sliced)
4 fresh basil leaves
4 slices of french bread
2 tbsp butter (melted)
Pesto recipe
Makes 2 sandwiches

Butter bread, lay pieces butter side down, pile with cheese, tomato, basil, lay top bread piece on top-spread pesto on that top piece lay pesto side down and butter top, flip sandwich and serve!

Southwest Chicken Sandwich




Southwest Chicken Sandwich

You will need:
4 skinned and boned chicken breasts
2 tablespoons chopped fresh cilantro
2 tablespoons vegetable oil
2 teaspoons chili powder
1/4 teaspoon ground red pepper
1 garlic clove, minced
1 cup (4-ounces) shredded Mexican four cheese blend
1/3 cup mayonnaise
4 French bread slices, toasted or just use buns like I did!

1. Place chicken between two sheets of heavy duty plastic wrap, adn flattern to 1/2 inch thickness using a meat mallet or rolling pin.

2. Stir together cilantro and next 4 ingredients. Spread on chicken.

3. Grill, covered with lid, over medium high heat 8 to 10 minuteson each side or until chicken is done. (Or cook in the skillet, like I did!)

4. Meanwhile, stir together cheese and mayonnaise. Spread on bread slices. Place bread, cheese mixture side up, on a baking sheet. Broil 6 inches from heat 1 to 2 minutes or until cheese melts.

5. Place chicken on bread. I served with fries and black beans mixed with chopped onions and sour cream (not pictured).

Also made these for my parents while visiting and Daniel and my parents liked them. I suggest if you don't like Cilantro though, to just not use it, because it really holds on to that taste.

Salsa Cheeseburger Sliders

Daniels little sliders, they were fun and little!


Salsa Cheeseburger Sliders

1 package of Hawaiian rolls
2 lbs ground meat
5 slices your choice cheese
1/4 cup salsa (I used hot)
Condiments you like
Chips and pickle if you want!
Salt and Pepper and I used Meat tenderizer and Hamburger Spice from McCormick

Mix raw meat with salt, pepper, meat tenderizer, hamburger spice and 1/4 cup salsa, put on grill, if burger is falling apart, put bread crumbs in to hold. We put foil down on top of grill to grill them.

Fun little burgers, can be used at appetizers if you'd like!
