My friend Kourtney makes these amazing enchilada's. This particular night she made them for me and took pictures and then brought them to my house. I have made them once and they were easy to make, so here is the recipe, hope you enjoy them too! They are SOOOO good!Kourtney's Krazy Kream Cheese Enchiladas
1-2lbs. if ground meat
large can of enchilada sauce
2 packs of enchilada seasoning
8 oz. of cream cheese
16 oz. of shredded cheese
10-15 medium size tortillas
large can of tomato sauce
Cook the ground meat, drain, and add 1 pack of enchilada seasoning. Cut cream cheese in desired size strips. Mix can of tomato and enchilada sauce together in a saucepan, add the other enchilada seasoning. Cook on low heat for a few minutes. Spray dish with Pam, pour the sauce on the bottom of the pan. Dip the tortilla in the sauce, add shredded cheese, cream cheese, meat and roll...repeat until all are done. Pour the remaining sauce on the top and cover with shredded cheese. Cook at 350 degrees for 30-40 minutes covered with foil.
