Papa Cheek's Potato Salad
6 baking potatoes
1/2 cup chopped green onion
1/2 cup celery chopped
3 hard boiled eggs
mayo-4 tbsps
yellow mustard-2-3 tbsps... to taste
salt and pepper
Boil potatoes with skins, don't let them get too soft, or they will turn to mush. When boiled cut into chunks and add celery, eggs, onion, mayo, mustard and salt and pepper to taste. The amount of mayo and mustard you use is debatable for how much you like in your potato salad, so it's up to you.
This is my Daddy's recipe and he always made it growing up and served it with BBQ chicken or BBQ Ribs. Very good grilling out side!
